At Windham High School, Windham Middle School and Jordan Small Middle School in Windham and Raymond
Maine, we featured a “local Thanksgiving”.  Our menu included:
Roast Turkey (thanks, USDA!)
Garlic smashed potatoes w/ local red potatoes
Roasted locally grown squash
Cranberry Salsa made with local cranberries – YUM!
Wheat dinner roll
Baked Maine Apple

So delicious!

Cranberry Salsa

3 cups chopped cranberries
2/3 cups sugar
1/2 cup thinly sliced scallions
1/2 cup chopped cilantro
juice of 2 limes
1 finely chopped jalapeño pepper
4 teaspoons grated gingerroot

Mix it all together in a food processor and serve with pita chips

as shared an idea for using the USDA ground pork.
Th
ey made Stromboli's following the recipe in the USDA file.
By using
purchased wheat pizza dough balls, and used the
ground pork seasoned with Italian spices in
place of the ham.
It was m
enued as Italian Sausage Calzone and served it with
dipping sauce.

Another recipe that is going on the menu soon is Fish Tacos.  
I
t uses unbattered fish which is what we can get as an NOI
purchase.
